Let’s Go LOW CARB, Let’s Go!

1

I recently visited a dietitian. Here’s what transpired!

At the time, I was very taken aback. You see, it’s the first time I’ve ever met with a registered dietitian, and I was looking forward to having some structure brought into my eating life. I knew I needed to make some changes and lose weight; it was a matter of my health.

Well, one of the first things the R.D. said to me was, “You look horrible! I mean, you just look horrible! You really look like you don’t feel well.” Well, the latter was true, I didn’t feel well. I was in the middle of a bacterial sinus infection and had just gotten a shot in my wrist for carpel tunnel. If you’ve read my bio and previous post on chronic pain, you know I deal with much more. Anyway, I was so taken aback, I just sat there! I couldn’t believe she had said that. I could hear her, but I thought, “Wouldn’t it be a little bit gentler if she had told me I looked like I FELT horrible, not that I looked horrible?” I have now been able to laugh about it with friends and just had to let it go.

What woman hasn’t experienced the love-hate relationship we have with carbs? Most women I know love carbs but hate what they do to our bodies. They wreak holy havic wherever they decide to go … like your hips, thighs, or bottom! As we get older, we can’t escape their evil clutches. Yet, with a game plan, we can get these ugly carbs under control. Mine is officially called “LET’S GO LOW CARB, LET’S GO!” Yes, cheer along with me!!!

Low Carb - leafy green salad with vegetablesSo, here is the game plan. She told me to start out the first two weeks with no more than 25-35 carbs per meal. If you’ve been eating a lot of carbs, you will quickly see that this is not so easy to do when your stomach is rumbling at 4:00 p.m. She said try to eat five hours apart. Snacks are to be things like a few almonds or a piece of cheese. After the first two weeks, I can go up to 40 carbs per meal. I’ve lost rather rapidly this first week. I think it is because my body is in shock and I have so much weight to lose. (DISCLAIMER: I am not qualified to give medical advice! I just want to share my own experience with you all so that it might help someone out there. Never start a diet or exercise program without first consulting your doctor.)

I have come to realize that I have more strength than I thought I did, and I’m not going to believe that I’m a horrible looking person. I am made in the image of Christ, and I am God’s child. I can walk in confidence in that. No one can tear down who we are in Christ, no matter how much weight we may want to lose. It can only be torn down if we allow it to. I’m not going to allow it to happen. I’m trusting in the Lord, one day at a time, and I’m sticking to LOW CARB! So let’s go low carb, Ladies, let’s go!

Now, I feel I’m on the steady path. I made it through week one. Ha! That sounded funny to say! It is just that compared to where I used to be, I feel really good about this. I can do this. It is not NO CARBS, it is just LOW CARBS. We can all do that, if we are struggling. Keep your head held high, and enjoy lots of green, leafy veggies and lean meats! You can do this, Ladies! I’m cheering us all on. LET’S GO!

An avid collector of black tole trays, you could find Stephanie at any antique shop on any given day. She has a passion for collecting art; after taking art history in college, this girl was never the same! She loves to daydream, read, eat lunch with friends, and most importantly, spend time with her family. She is very organized and detail oriented. She does not consider herself to be a creative person, but has to push herself when faced with the challenge of doing things outside her comfort zone. And, she laughs! She loves seeing the humor in the smallest things and thinks we should all have a good laugh every day. Dealing with Rheumatoid Arthritis since 2009, her biggest supporters are her precious husband of 24 years, David, and her two wonderful children, Jane and Gib. The sensitivity they bring to her is not overlooked, but humbly appreciated. She cannot begin to describe all that they have done for her, but just know that she thinks she has the best care in the world. They are truly golden. Her favorite Bible verse is Exodus 14:14, "The Lord will fight for you, you need only to be still." She depends on the Lord for daily strength and knows the battle is not hers to fight alone.

  1. Congratulations for making it through week 1! Diet changes can be so challenging. In my experience, lower carb has really helped to decrease overall inflammation and pain of autoimmune disease, I hope you will find the same. Let’s Go Low Carb! Let’s Go ❤️
